Veggie Wraps
These wraps make a great lunch or a light dinner.
Serves 4
Ingredients Directions
4 large whole wheat wraps (about 12" in diameter) Fold the wraps in half, wrap in aluminum foil and set aside.

1 Tbsp olive oil
1 onion chopped
1 carrot julienned
1/4 tsp salt
1/4 tsp sugar
1/2 Lb mushrooms chopped
Preheat the oven to 350F. In a large skillet set over med heat, sauté onion and carrots in 1 Tbsp olive oil until slightly browned, stirring often.
Sprinkle with a dash of salt and sugar and stir.
Turn up heat to high and add mushrooms. Sauté until all the vegetables are nicely brown about 5-8 minutes stirring often. Remove to a bowl and set aside.

1 Tbsp olive oil
1 red, orange, or yellow pepper sliced
1 cup broccoli florets
Add 1 Tbsp oil to the same skillet and sauté peppers and broccoli on med-high stirring occasionally until nicely browned. Remove to the same bowl as onions, mushrooms and carrots and set aside.

1 Tbsp olive oil
5 cups packed fresh spinach chopped
2 garlic cloves finely chopped
1/4 tsp salt
1/8 tsp black pepper
¼ cup crumbled feta
Add 1 Tbsp oil to the same skillet set over medium heat. Add spinach and sauté until wilted. If all the spinach does not fit at once, add it in portions. As one portion wilts add the next portion until all the spinach is in the skillet. While the spinach is cooking, put the wraps in the oven for 5-7 minutes to warm up. Add the garlic and all the veggies from the bowl back to the pan. Sauté for couple of minutes to reheat them. Season with salt and pepper. Taste and correct seasoning. Turn the heat down to low and stir in feta until slightly melted. Take off heat.

1/2 cup hummus
1/2 cup yogurt
Lay the wraps out on the clean surface. Spread 2 Tbsp of hummus on each wrap leaving about 2" border on all sides except for the one closest to you. Spread 2 Tbsp of yogurt on each wrap over hummus. Divide the veggies equally among the wraps placing them on the part of wrap closest to you. Help yourself with a spoon to keep the veggies contained and fold the wrap away from you. Fold in the sides, and finish rolling the wrap away from you. Repeat with the other 3 wraps and serve.
