Bluefish Burgers

This recipe works with leftovers from blue fish cooked in any way -- grilled, broiled, seared, etc.

1 Tbsp oil
1 medium yellow onion, diced
1/4 tsp salt
1/8 tsp sugar
|
Heat butter and oil in a large skillet over moderately low heat. Add the onions, salt, and sugar, and cook stirring occasionally until onions are soft and golden brown, 10-12 minutes.

1 Lb bluefish leftovers
2 tsp finely chopped ginger
3 Tbsp chopped cilantro or parsley
1 cloves mashed garlic
1/4 cup mayo
|
Remove skin from bluefish and break it up into flakes. Mix it with ginger, cilantro (or parsley), garlic, mayo, and sauteed onions. Form the mixture into 2 patties 3/4 inch thick. Refrigerate covered with plastic wrap for at least 30 minutes or as long as 24 hours.

1 Tbsp oil
1/4 cup bread crumbs
|
Set a large non-stick skillet over medium heat. When the pan is hot add the oil. Pour the bread crumbs into a plate. Dredge both sides of blue fish burgers in crumbs and add them to the pan. Sauté for 4 minutes, flip using a spatula, and sauté another 4 minutes. Serve on burger buns with lettuce, tomatoes, red onions, and mayo (or aioli).
